Getting ready for the week ahead....

..... laundry's done, dishes done, all the work for my class is done (until next week's assignment is announced of course).

Did some cooking today too. Tried a quickie recipe for green beans that turned out damn good. I tend to kind of get into a veggie rut with the standard salads, broccoli and cauliflower so this was an interesting segue. Of course, being me, there will be adaptations in the future. :)

Fried Green Beans
1/4 cup cup vegetable or olive oil
3 Tablespoons butter
1 bag frozen french cut or petite whole green beans
2 Tablespoons meat seasoning (such as Montreal Steak Seasoning or Lawry's Perfect Blend Dry rub for chicken or beef...any dry rub seasoning should do.)

Place oil in large fying pan
Turn on high heat
Dump in green beans
Sprinkle on Seasoning.
Stir ingredients to mix.
Leave on High Heat for 15 minutes, stir every 3 minutes.
At the last minute, add butter, stir to melt.
DONE!

I'm also starting to play with smoothies. This is more hit and miss. For the lowest carb count I use plain yogurt of course. However currently I'm using Dannon's yogurt and there's a distinct yogurt-y aftertaste I don't like much. Need to play more with sweetners and flavorings to hide that. However with the plain yogurt, Hood's Carb Countdown milk and some other things, it does help with the calcium requirement. More updates as I have things I like.

On other fronts, I got some of the Tazo Organic Chai Tea from Wegmans. To die for! ::happy sigh:: Now I have two ways to get my chai.... this is one of those seemingly small things that really makes it easier for me to continue the lifestyle changes and not feel deprived.

Life is good. :)
